PURPOSE AND SCOPE ================================================================================ This document specifies the Daralbeida House Style governing the DARAL7 extra virgin olive oil product. The House Style is the tight spec envelope within which all lots released under the DARAL7 wordmark must fall. The House Style serves two operational functions. First, it bounds the sensory and chemistry variation between lots so that a consumer purchasing DARAL7 in March receives an oil that is recognizably the same product as the lot purchased in October from a different qualifying producer. Second, it provides the specialty grocery buyer with a defensible consistency artifact — the per-shipment COA always falls inside the same envelope, regardless of which qualified producer pressed that campaign's oil. Without a House Style, the qualification protocol DAB-SOP-SOURCING-001 Rev 1 produces lots that all clear the IOC EVOO floor and the Daralbeida internal floor, but with sensory and chemistry variation wide enough to register as brand drift to a returning customer or to a buyer who pulls a current bottle off the shelf after onboarding. This document is the controlling reference for what constitutes DARAL7-compliant oil. It is binding on the producer qualification protocol, the three-gate QC protocol, the lot release decision, and the consumer-facing communication architecture. ================================================================================ 2. STRATEGIC RATIONALE — WHY A HOUSE STYLE IS REQUIRED ================================================================================ The supplier-story reconciliation work (Agricultural Sourcing Volatility and Supplier Credibility chat, May 2026) established that Daralbeida operates an aggregator structure under Moroccan Law 04-12. The single-estate property attaches to each lot, not to a permanent estate. Producer rotation between PRIMARY and BACKUP tiers is operationally normal and contractually prepared. This architecture creates a brand consistency problem the qualification protocol alone does not solve. A lot from one qualifying producer may have polyphenol content of 270 mg/kg with a medium-robust profile and gentle peppery finish. A lot from a different qualifying producer may come in at 450 mg/kg with an assertively bitter, pungent profile. Both pass the Daralbeida internal floor (FFA at or below 0.5 percent, peroxide at or below 12, polyphenols at or above 250). Both qualify as PRIMARY-tier supply. They will not taste like the same brand. The buyer trust mechanism in specialty grocery is not lot-by-lot tasting. Buyers taste at onboarding, at annual category review, and when complaints flag a problem. Between those events, the per-shipment Eurofins COA, the lot ID, and the harvest date are the accepted proof of consistency. The House Style is what gives the COA its meaning. A COA that reads "polyphenols 380 mg/kg" tells the buyer the lot matches the onboarding profile only if 380 sits inside a defined band the buyer can reference. Without a band, the COA reads as a number, not as a consistency signal. The House Style is therefore the operational artifact that converts the qualification floor into a brand-consistency tool. It tightens the producer-qualifying envelope without disturbing the lot-level single- estate property and without disturbing the multi-producer architecture required for agricultural-volatility survival. ================================================================================ 3. THE FLOOR-VERSUS-BAND PROBLEM ================================================================================ The Daralbeida internal QC floor as documented in DAB-TS-2026-01 v1.1 Section 3 is a pass/fail floor: FREE FATTY ACIDS At or below 0.5 percent PEROXIDE VALUE At or below 12 meq O2/kg POLYPHENOLS At or above 250 mg/kg This floor is stricter than the IOC EVOO standard. It is sufficient for legal extra virgin classification and for IOC compliance. It is not sufficient for brand consistency. The problem is structural: a floor admits everything above it. A band admits only what falls between a specified lower and upper bound. The DARAL7 House Style replaces the floor with a band for every metric that drives sensory experience. The floor remains in force for legal classification. The band layers on top of the floor as the additional release criterion for DARAL7 wordmark application. Compliance Layer Definition --------------------------- --------------------------------------- IOC EVOO Standard Legal extra virgin minimum Daralbeida Internal Floor Quality minimum for any qualifying lot DARAL7 House Style Band Brand consistency envelope for DARAL7 wordmark application Per-Lot Spec Specific values measured for one lot, recorded in DAB_Lot_Record A lot may clear the IOC standard, clear the Daralbeida internal floor, and still fall outside the House Style band. Such a lot does not receive the DARAL7 wordmark. Disposition rules in Section 8 apply. ================================================================================ 4. CHEMISTRY ENVELOPE ================================================================================ The House Style chemistry envelope tightens four metrics from the Daralbeida internal floor. The bands are constructed to reproduce the sensory profile the brand commits to in commerce. -------------------------------------------------------------------------------- 4.1 Free Fatty Acids -------------------------------------------------------------------------------- Method: IOC official method, titration. Layer Threshold --------------------------- --------------------------------------- IOC EVOO Standard At or below 0.8 percent Daralbeida Internal Floor At or below 0.5 percent DARAL7 House Style Band 0.20 percent to 0.35 percent Rationale: FFA below 0.20 percent typically requires an extraction window so narrow that yield collapses and producer cost rises beyond what the offtake contract supports. FFA above 0.35 percent introduces sensory softness inconsistent with the assertive profile DARAL7 commits to in commerce. The band is operationally achievable by early-harvest continuous cold press from a competent mill and produces the intended sensory signature. -------------------------------------------------------------------------------- 4.2 Peroxide Value -------------------------------------------------------------------------------- Method: IOC official method. Layer Threshold --------------------------- --------------------------------------- IOC EVOO Standard At or below 20 meq O2/kg Daralbeida Internal Floor At or below 12 meq O2/kg DARAL7 House Style Band At or below 8 meq O2/kg Rationale: peroxide value is a freshness indicator. Above 8, sensory panels begin detecting oxidative notes inconsistent with the "pressed-fresh" claim the brand makes in commerce. The 8 ceiling is achievable when nitrogen-inerted tank storage and rapid bottling discipline are maintained. No lower bound applies — lower is always better. -------------------------------------------------------------------------------- 4.3 Polyphenol Content -------------------------------------------------------------------------------- Method: HPLC, total phenolic compounds expressed in mg/kg. Layer Threshold --------------------------- --------------------------------------- IOC EVOO Standard No minimum Daralbeida Internal Floor At or above 250 mg/kg DARAL7 House Style Band 280 mg/kg to 380 mg/kg Rationale: polyphenol content is the single largest driver of sensory character in early-harvest EVOO. Below 280 the oil reads as medium- mild rather than the medium-robust profile the brand owns. Above 380 the oil reads as assertively bitter and pungent — defensible as a premium attribute, but a different product from what the brand markets. The 100 mg/kg band gives operational latitude for harvest- year variation while keeping the perceived intensity inside one recognizable range. Lots between 250 and 280 mg/kg may be qualified for B2B or non-DARAL7 channels under hybrid-mode operations (per DARX-KB-PLATFORM-VISION- 001) but are not eligible for the DARAL7 wordmark. Lots above 380 mg/kg may be reserved for a future limited-edition intensity-tier SKU (Year 2 and beyond) but are not eligible for the standard DARAL7 wordmark. -------------------------------------------------------------------------------- 4.4 UV Absorbance Indices -------------------------------------------------------------------------------- Method: IOC official method, K232 / K268 / Delta-K. Layer Threshold --------------------------- --------------------------------------- IOC EVOO Standard K232 at or below 2.50; K268 at or below 0.22; Delta-K at or below 0.01 DARAL7 House Style Band K232 at or below 2.10; K268 at or below 0.18; Delta-K at or below 0.008 Rationale: UV indices detect oxidation and refining-process residues. Tighter ceilings rule out lots that have been heat-stressed during extraction or stored without inert-gas protection. They are a secondary freshness indicator and back up the peroxide ceiling. -------------------------------------------------------------------------------- 4.5 Summary Table -------------------------------------------------------------------------------- Metric IOC EVOO DAB Floor DARAL7 Band --------------- -------------- --------------- ----------------------- FFA At or below At or below 0.20 to 0.35 percent 0.8 percent 0.5 percent Peroxide At or below At or below At or below 8 20 meq O2/kg 12 meq O2/kg meq O2/kg Polyphenols No minimum At or above 280 to 380 mg/kg 250 mg/kg K232 At or below (per IOC) At or below 2.10 2.50 K268 At or below (per IOC) At or below 0.18 0.22 Delta-K At or below (per IOC) At or below 0.008 0.01 ================================================================================ 5. CULTIVAR AND HARVEST WINDOW ================================================================================ -------------------------------------------------------------------------------- 5.1 Cultivar Lock -------------------------------------------------------------------------------- DARAL7-compliant oil is pressed from 100 percent Picholine Marocaine fruit. The Picholine Marocaine sensory signature — grassy and herbaceous mid-palate, almond and artichoke notes, modest-to-medium peppery finish — is integral to the brand promise. Permitted exception: a secondary cultivar contribution at or below 15 percent of total fruit mass is permitted if and only if the secondary cultivar is pre-disclosed in the producer contract, is consistent across the producer rotation, and the resulting sensory profile remains inside the House Style descriptor envelope per Section 6. The secondary cultivar must be a Moroccan-traditional cultivar (Haouzia or Menara permitted; Arbequina, Picual, Koroneiki prohibited). Blends not meeting these conditions are not eligible for the DARAL7 wordmark, regardless of chemistry compliance. -------------------------------------------------------------------------------- 5.2 Harvest Window -------------------------------------------------------------------------------- DARAL7-compliant fruit is harvested at the green-to-violet maturity transition, October 1 through November 15 in normal years. Variation of plus or minus two weeks is permitted in response to verified weather, drought, or pest events. Variation beyond plus or minus two weeks requires founder authorization recorded in the producer record. Late-harvest fruit (post-November 30) produces an oil with sensory character outside the House Style envelope — sweeter, less peppery, lower polyphenol — regardless of chemistry compliance. Such fruit is not eligible for DARAL7 wordmark application. -------------------------------------------------------------------------------- 5.3 Pressing Window -------------------------------------------------------------------------------- Fruit-to-press lag at or below 12 hours from picking to mill entry. This is the single largest driver of FFA. A producer who cannot meet the 12-hour lag is not qualifying for DARAL7 supply, regardless of chemistry result on individual lots. Continuous cold press, water temperature at or below 27 degrees Celsius throughout extraction, malaxation time at or below 45 minutes. These are the operational conditions that produce the House Style envelope. ================================================================================ 6. SENSORY VOCABULARY AND DESCRIPTORS ================================================================================ -------------------------------------------------------------------------------- 6.1 Fixed Vocabulary -------------------------------------------------------------------------------- All DARAL7 consumer-facing communication uses the following descriptors, and only these descriptors, for the brand's sensory signature. Position Permitted Descriptors ----------------- --------------------------------------------------- Overall character medium-robust, structured, assertive, balanced Aroma grassy, herbaceous, green-tomato leaf, artichoke, fresh-cut grass Mid-palate green almond, artichoke, bitter green apple Finish peppery, pungent, lingering, throat-warming The vocabulary is locked. Per-lot tasting notes may select among these descriptors and may add lot-specific qualifiers ("more pronounced artichoke this harvest", "softer green almond"), but may not introduce new categorical terms (no "buttery", no "delicate", no "mild", no "fruity-sweet"). -------------------------------------------------------------------------------- 6.2 Intensity Scale -------------------------------------------------------------------------------- A five-step intensity indicator appears on the back label of every DARAL7 bottle. The scale is calibrated to the polyphenol band. Step Label Polyphenol Range ------- ------------------ ----------------------------------- 1 Mild (not produced for DARAL7) 2 Medium-Mild (not produced for DARAL7) 3 Medium-Robust 280 to 320 mg/kg 4 Robust 321 to 360 mg/kg 5 Bold 361 to 380 mg/kg Every DARAL7 lot lands at Step 3, 4, or 5. Steps 1 and 2 are printed on the scale for context — they show consumers what the brand is not. -------------------------------------------------------------------------------- 6.3 Permitted Variation -------------------------------------------------------------------------------- Within the locked vocabulary, lot-to-lot variation is permitted and celebrated. The per-lot QR verification page (daral7.com/verify/ [LotID]) describes which descriptors dominate that lot and which sit in support. The variation tells the harvest story; the locked vocabulary prevents the brand from drifting. -------------------------------------------------------------------------------- 6.4 Prohibited Descriptors -------------------------------------------------------------------------------- The following descriptor categories are prohibited in DARAL7 commerce, regardless of how a sensory panel might characterize an individual lot. Category Examples ---------------------- ---------------------------------------------- Softness vocabulary buttery, smooth, delicate, mild, mellow Sweetness vocabulary sweet, honeyed, candied Refined-oil character neutral, clean, light Defect-adjacent terms rancid, musty, fusty, winey, metallic A lot that would correctly be described using terms in this prohibited list is, by definition, outside the House Style envelope and not eligible for the DARAL7 wordmark. ================================================================================ 7. QUALIFYING CRITERIA FOR HOUSE STYLE COMPLIANCE ================================================================================ -------------------------------------------------------------------------------- 7.1 Lot-Level Qualification -------------------------------------------------------------------------------- A lot is House Style compliant if and only if all of the following hold. a. Chemistry envelope per Section 4 fully cleared, every metric in band. b. Cultivar lock per Section 5.1 satisfied. c. Harvest window per Section 5.2 satisfied. d. Pressing window per Section 5.3 satisfied. e. Sensory panel (Gate 1 sensory at Casablanca, per DAB-SOP- SOURCING-001 Rev 1 Section 9.3) returns descriptors within the Section 6 vocabulary and no descriptors within Section 6.4. f. Gate 2 Eurofins COA reproduces the Gate 1 chemistry within IOC reproducibility tolerance, with all values remaining inside the House Style band. A lot that fails any of the six conditions is not House Style compliant. The DARAL7 wordmark is not applied to that lot. -------------------------------------------------------------------------------- 7.2 Producer-Level Qualification -------------------------------------------------------------------------------- A producer is House Style capable if a representative sample (Phase 4 of DAB-SOP-SOURCING-001 Rev 1) demonstrates that the producer's typical output sits inside the House Style envelope, not merely above the floor. Producers who consistently produce above the floor but outside the band are designated BACKUP for non-DARAL7 supply (B2B, hybrid-mode channels) or WATCHLIST pending operational changes that could bring them inside the band. Producer-level House Style capability is recorded as a binary flag in the producer record alongside the tier designation. HOUSE_STYLE_CAPABLE = TRUE or FALSE A PRIMARY-tier producer who is not House Style capable does not supply the DARAL7 brand under any circumstance. ================================================================================ 8. OUT-OF-BAND LOT DISPOSITION ================================================================================ -------------------------------------------------------------------------------- 8.1 Disposition Hierarchy -------------------------------------------------------------------------------- A lot that clears the Daralbeida internal floor but not the House Style band is dispositioned by the following hierarchy, in order. a. Reserve for a future intensity-tier SKU (Year 2 and beyond) if the out-of-band condition is "above the band" on polyphenols and sensory profile remains within the vocabulary envelope. b. Allocate to hybrid-mode B2B supply per DARX-KB-PLATFORM-VISION- 001 if the producer is contracted for B2B-eligible output. c. Sell into Moroccan bulk market or local channels if no Daralbeida disposition is available. d. Reject for cause if the out-of-band condition reflects a structural production failure rather than year-on-year variation. The decision is recorded in DAB_Lot_Record with rationale and disposition channel. -------------------------------------------------------------------------------- 8.2 Disposition Rules -------------------------------------------------------------------------------- Rule 1: an out-of-band lot is never re-blended with an in-band lot to bring it into compliance. Blending collapses the single-lot single- pressing property of the DARAL7 product and is prohibited under all conditions. Rule 2: an out-of-band lot is never relabeled as DARAL7 under any pricing, packaging, or promotional pressure. The wordmark is not a marketing asset detachable from the spec. Rule 3: an out-of-band lot may carry the Daralbeida parent brand for B2B or institutional supply if the parent brand specification (separate document, future) admits the lot's profile. The DARAL7 wordmark and the Daralbeida parent brand are operationally distinct. ================================================================================ 9. CROSS-REFERENCE TO SOURCING AND QUALITY CONTROL ARCHITECTURE ================================================================================ The House Style does not replace any existing protocol. It layers a brand-consistency criterion on top of existing qualification and quality control architecture. The references below specify where in the existing architecture the House Style is enforced. Existing Document Enforcement Point ---------------------------- -------------------------------------- DAB-SOP-SOURCING-001 Rev 1 Phase 4 Eurofins panel and Phase 5 Qualification Decision check House Style band, not just floor. HOUSE_STYLE_CAPABLE flag set. DAB-TS-2026-01 v1.1 Gate 0 reading checks band, not just floor. Gate 1 sensory panel applies Section 6 vocabulary. Gate 2 Eurofins COA confirms band on landed inventory. DAB_Lot_Record House Style compliance flag recorded per lot. Out-of-band disposition channel recorded per Section 8. DARX-KB-PLATFORM-VISION-001 Hybrid-mode B2B disposition consumes out-of-band qualifying lots; brand- channel supply consumes in-band lots. DARX-STRAT-KB-001 v1.1 Buyer Doctrine Principle 11 references the House Style as the operational basis for lot-level authenticity in specialty grocery buyer relationships. ================================================================================ 10. CONSUMER-FACING COMMUNICATION OF THE HOUSE STYLE ================================================================================ -------------------------------------------------------------------------------- 10.1 Bottle Label Communication -------------------------------------------------------------------------------- The House Style appears on every DARAL7 bottle in three forms. Element Location Content ---------------------- ------------------ --------------------------- Harvest date Front label "Harvest: [Month YYYY]" Intensity indicator Back label 5-step scale per Section 6.2, this lot's step circled or filled Lot ID Neck band Per DAB-TS-2026-01 v1.1 Section 5.2 The harvest date is mandatory on the front label per EVA certification expectations and per the buyer-doctrine commitment to harvest-date transparency. -------------------------------------------------------------------------------- 10.2 QR Verification Page -------------------------------------------------------------------------------- The per-lot QR target page at daral7.com/verify/[LotID] carries the following House Style content for the specific lot. a. Harvest date and pressing date. b. Polyphenol mg/kg measured value for the lot, with the band reference shown for context. c. Sensory descriptors selected from the Section 6 vocabulary, describing this lot's specific profile. d. Intensity step (3, 4, or 5) for this lot. e. Gate 1 and Gate 2 pass status (no raw chemistry values for remaining metrics). f. Reference to the House Style overview (consumer-friendly version of Section 4 chemistry envelope, without trade-secret thresholds). Editorial discipline: the per-lot page tells the story of variation inside the envelope. It celebrates which descriptors dominate this harvest. It does not apologize for variation or compare this lot unfavorably to a prior lot. -------------------------------------------------------------------------------- 10.3 Amazon Listing Communication -------------------------------------------------------------------------------- Amazon listings (per DAB-AMZ-LISTING-001) pre-qualify buyers on the House Style profile so that the listing copy and the bottle align with the same intensity expectation. Required elements. a. Title and bullets use Section 6.1 vocabulary only. b. A+ Module 5 (Provenance and Authenticity) references the per- lot lot ID and QR verification page. c. Prohibited descriptors per Section 6.4 do not appear in listing copy, even in response to a customer-submitted question. d. PPC keyword strategy excludes terms that pre-qualify buyers for a non-House-Style intensity (no "mild olive oil", no "delicate finish", no "buttery"). The Amazon Returns SOP (DARX-SOP-AMAZON-RETURNS-001) Section 6.3 flavor preference signal threshold of 10 percent applies; if breached, the listing copy is revisited, not the House Style. ================================================================================ 11. MAINTENANCE, REVISION TRIGGERS, AND ANNUAL CALIBRATION ================================================================================ The House Style is reviewed at the following triggers. a. Annual calibration following the close of each harvest year. The review compares the year's actual lot population to the House Style envelope and assesses whether the band needs adjustment to reflect agronomic reality. Adjustment requires founder authorization. b. Producer rotation event. When a new PRIMARY producer enters supply or a BACKUP producer is activated to PRIMARY, the first campaign from that producer is reviewed against the House Style with extra sensory rigor to confirm the band is being held. c. Buyer complaint trigger. If a specialty grocery buyer or Amazon listing review surfaces a complaint that reads as House Style drift (not isolated taste preference), the affected lot is pulled for analysis against the band before any change to the band is contemplated. d. Cultivar event. Any proposal to add a secondary cultivar beyond Picholine Marocaine, or to widen the 15 percent secondary allowance, triggers a House Style revision and a downstream update to all consumer-facing communication. e. Channel expansion event. Entry into a new channel (DTC launch Year 2, specialty retail Year 2 to 3, food service Year 3 and beyond) triggers a House Style review to confirm the envelope still serves the new channel's buyer expectations. Revisions to this document follow BPGP versioning conventions. Minor revisions (band adjustments within a metric) increment to v1.x. Major revisions (addition or removal of a metric, change to cultivar lock, change to harvest window) increment to v2.0 and beyond. A superseded House Style version is archived for at least three years to support audit of which version was in effect at each producer qualification and each lot release decision. ================================================================================ 12. GLOSSARY ================================================================================ Band A tightened spec window with both a lower and upper bound. Used in this document to contrast with a floor (lower bound only). The House Style band defines a brand-consistency envelope inside which all qualifying DARAL7 lots fall. DARAL7 The consumer-facing wordmark for the Daralbeida extra virgin olive oil product. The numeral 7 is integral to the wordmark and references the seven tests every lot passes before release. Pronounced "dah-RAL-seven." Floor A pass/fail threshold with only a lower bound. The Daralbeida internal QC floor and the IOC EVOO standard are both floors. The House Style replaces the floor with a band for metrics that drive sensory character. House Style The tight chemistry, cultivar, harvest, sensory, and pressing envelope inside which all lots eligible for the DARAL7 wordmark must fall. Documented in this specification. Enforced at producer qualification, three-gate QC, and lot release. House Style Capable A binary producer-record flag indicating that a producer's typical output sits inside the House Style envelope, not merely above the floor. Required for DARAL7 brand supply. Out-of-Band Lot A lot that clears the Daralbeida internal floor but falls outside the House Style band on one or more metrics. Not eligible for the DARAL7 wordmark. Disposition follows Section 8. Picholine Marocaine Morocco's indigenous olive cultivar. The cultivar lock for DARAL7 supply per Section 5.1. Pronounced "pee-show-LEEN mah-roh-CANE." Single-Lot The property that each DARAL7 bottle carries oil from one tank, one pressing, one producer. Distinct from "single- estate brand-wide", which is not a Daralbeida claim. Single- lot is enforced at the bottling step and recorded in the lot record. ================================================================================ 14.
